White Chocolate Cinnamon-Chip Cheese Pie

Baking is a science and an exact one at that; however, when it comes to combining flavors throw the science book out the window! If you think certain flavors will rock together, give them a try. Never be afraid to experiment. Some of my best recipes, including my famous Ginger Chews, were flops the first several (hundred) times I made them. So without further delay, here is my White Chocolate Cinnamon Chip Cheese Pie.

Pie Crust:

12 oz Pie Crust Made Easy

  • 10 oz Pastry Crust (for your pie base)
  • 2 oz Pastry Crust (for your pie topper)

Filling:

  • 3 Granny Smith Apples
  • ¼ Cup Cinnamon Chips
  • 1 tsp Nutmeg
  • ½ tsp Cinnamon
  • 1 Cup Sugar
  • ¼ Cup Cornstarch
  • ½ Cup Shredded White Chocolate
  • ½ Cup Shredded White Cheddar
  • Egg Wash (Egg Yolk and Water)
  • Pie Pan 9" Deep

Now Let’s Get Started:

Preheat oven to 350
Step #1: Peel and finely slice all apples
Step #2: Mix together: sugar, cornstarch, spices, and chips
Step #3: Fold in apples
Step #4: Pour apple filing into pie shell
Step #5: Cover with chocolate and cheese
Step #6: Put pastry topper on pie
Step #7: Egg wash pie topper
Step #8: Bake 350o for 30-40 minutes until deep golden brown

What, you want my Béchamel Sauce, too? OK:

Ingredients:

  • 2 TBSP Butter
  • 2 TBSP Flour
  • 1 ¼ Cups Heavy Cream, Heated
  • ½ Cup Shredded White Cheddar
  • ½ Cup Shredded White Chocolate
  • ½ tsp Nutmeg

#RedFlagMoment Tip: When stirring flour into butter DO NOT STOP STIRRING. You must stay with it until it is finished.

Now Let’s Get Started:

Step #1: Melt the butter in saucepan
Step #2: Stir in the flour and cook, stirring constantly, until the paste cooks and don't let it brown. Do not stop stirring! This is a must - stay with it till it is finished which will be around 2 minutes.
Step #3: Add the hot heavy cream (heat heavy cream slowly in separate sauce pan) Continuing to stir as the sauce thickens.
Step #4: Bring it to a boil - immediately remove from heat and add in cheese and chocolate stirring with spatula or wooden spoon (you do not want to add air)
Step #5: Continue stirring until smooth and creamy
Step #6: Add nutmeg and give it a quick stir
