Stuffed Cornish Game Hens


When it comes to food, I don't know that there are many things that sound more impressive than, "I will be making stuffed cornish game hens for dinner." And with my recipe being so easy, you'll want plan a "just because" dinner party so that you can show off a little...or a lot!


  • 4 Cornish Game Hens, Defrosted
  • 7 Large Slices Levain Bread (Or ½ loaf of white bread)
  • 1 Granny Smith Apple, Peeled & Finely Diced
  • ½ cup Raw Chopped White Onion
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper
  • ½ tsp White Pepper
  • ½ tsp Herbes de Provence
  • 4 oz Melted Butter

Now Let’s Get Started:

Preheat oven for 355

Step #1: Lightly grill bread
Step #2: Cube bread
Step #3: Combine all ingredients in a bowl
Step #4: Stuff birds as full as possible
Step #5: Butter back of birds and season as desired
Step #6: Cover in parchment paper
Step #7: Cover in tinfoil
Step #8: Bake for 45 minutes at 355o
Step #9: Uncover birds
Step #10: Increase oven temperature to 385o and bake for an additional 10 – 15 minutes or until golden crispy brown
