Strawberry Blackberry Jam

Picking berries and making homemade jam is a tradition in my family that started with my dear Granny Kate. She passed it down to my mother and her sisters, the Daughters Rochford, and then to me.

I hope you enjoy this recipe - make it with some you love. (By the way, this jam is so good with scones and afternoon tea!)

  • 5 lbs Sliced Strawberries
  • 2 cups Sugar
  • 2 lbs Blackberries
  • ½ cup Roasted Rhubarb
  • 1 tbsp Vanilla Bean Paste
  • 4 tbsp Corn Starch

Now Let’s Get Started:

Step #1: In food processor combine strawberries, blackberries and roasted rhubarb
Step #2: Add fruit mixture to large pot and stir in sugar and vanilla bean paste
Step #3: Bring mixture to a boil and then simmer for 1 hour
Step #4: In a separate bowl make a slurry by mixing corn starch and 3 tbsp of liquid from pot
Step #5: Add slurry to pot and incorporate thoroughly
Step #6: Let cool and then serve, store, or share
