Pumpkin Whoopie Pie

As we discovered in the 3rd episode of the Food Network's Holiday Baking Challenge, whoopie pies can indeed come in different shapes and sizes. Here's my pumpkin inspired recipe from the show.

Ingredients:

  • 12 oz Butter (Salted & Softened)
  • 1 ½ cups Cane Sugar
  • 4 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Pumpkin Spice
  • ½ tsp Cinnamon
  • 2 TBSP Pumpkin Puree
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 2 cups All-Purpose Flour
  • 1 cup Self-Rising Flour
  • 1 cup Buttermilk

Frosting:

Combine all ingredients and beat on high until light and whippy

  • 8 oz Butter (Soften)
  • 3 ½ cups Powdered Sugar
  • 1 TBSP Vanilla Extract
  • 2 TBSP Whole Milk
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg

Now let’s get started:

Preheat over to 350
Step #1: Cream together butter & sugar
Step #2: Add eggs, 1 at a time
Step #3: Add remaining ingredients, alternating dry & wet, in medium mixer until combined
Step #4: Grease (12) 3” Bundt pans
Step #5: Fill each Bundt pan halfway
Step #6: Bake at 350o for 12-18 minutes (depending on oven)
Step #7: Let cool completely and remove each
Step #8: Place icing in piping bag
Step #9: Put icing on flat side of half of the Bundt cakes, sandwiching each with un-iced cake
Step #10: Decorate and enjoy!
