Orange Zest and Fig Scones

Scones are one of those baked treats that are good just about any time of day. They can be sweet or savory. They are great for breakfast, perfect as a snack and can even be the perfect complement to any meal. This orange zest and fig scone is one of my favorites for afternoon tea.

#RedFlagMoment Tips:

  • Make sure your butter is ice cold
  • Chop butter in to even sizes cubes

Ingredients:

  • 5 cups Self Rising Flour
  • 8 oz Frozen Cubed Salted Butter
  • 1/2 cup Sugar
  • 1 tsp Baking Soda
  • 10 oz Finely chopped Dried Mission Figs
  • 1 Orange zest
  • 1 TBSP Orange Juice
  • 1 3/4 cups Buttermilk

Icing:

  • 1 TBSP Fresh Orange Juice
  • 1/2 tsp Ground Cardamom
  • 1/2 tsp Almond Extract
  • 1 Cup Sifted Confectioners Sugar
  • 1/8 Cup Hot water (more water if you prefer a light glaze)

Now let’s get started!

Pre-heat oven to 365
Step 1: Combine all dry ingredients until base looks like bread crumbs
Step 2: Add Orange Zest and mix for 30 seconds
Step 3: Add buttermilk slowly until a dough ball forms
Step 4: Knead for two minutes and roll out
Step 5: Cut out Scones
Step 6: Wash scones with egg wash (I suggest a egg yolk & cream egg wash)
Step 7: Bake at 365o for 9-11 minutes – until golden brown
Step 8: Using a spoon, drizzle icing over hot scones
