Lime curd - what is it and how do you use it? Lots of people eat lime curd, or other flavored curds, just like pudding but there are so many uses for this zesty treat! It's perfect for tarts, pies, or as a filling in a stacked cake. Bake a dollop in to thumb-print cookies and cupcakes, or mix some in to a butter cream frosting for an extra punch of flavor.

- 4 Egg Yolks
- ½ cup Granular Sugar
- 4 tbsp Butter, Unsalted
- ½ cup Lime Juice
Now Let’s Get Started:
Step #1: In a double boiler slightly whisk egg yolks, sugar and lime juice Step #2: Add unsalted butter Step #3: With a wooden spoon stir mixture over boiling water. Be careful not to let mixture boil or it will curdle Step #4: Cook until mixture covers the back of the wooden spoon Step #5: Store in an air tight jar in refrigerator for up to 2 weeks
