Druid Harvest Pie


Pie is the first baked good I remember having a profound effect on my life. I was sitting in my Granny’s cottage in Ireland. It was summer time and we had picked bilberries in the bog together and then she should me how to make pastry. I remember being so amazed by how her hands weaved the butter sugar and flower together. Then in what seemed like only a moment, we had the best pie on earth! This is why, pie is my life.

  • 2 Green Apples
  • 1 cup Cranberries
  • ½ cup Chopped Pear
  • ¼ cup Golden Raisins
  • 2 cups Sugar
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • ¼ tsp Clove
  • 1 TBSP Whiskey
  • 4 TBSP Corn Starch

Crust: If you don't have a recipe of your own, here's one that I use frequently: Pie Crust Made Easy by Chef Maeve.

Now Let’s Get Started:

Pre-heat oven to 360
Step #1: In a sauce pan on medium heat, cook cranberries, 1 cup sugar, spices and pear. Cook until cranberries are tender
Step #2: Allow cranberries to cool fully
Step #3: Peel and finely slice apples
Step #4: Gently fold apples into cranberry mix
Step #5: Add ½ cup remaining sugar and whiskey
Step #6: Fold in cornstarch
Step #7: Fill 9" pie pan
Step #8: Create a crumb or pastry top for your pie
Step #9: Bake for 30 min at 360
