Cinnamon Apple Cupcakes

Peanut butter and jelly. Cake and ice cream. Milk and cookies. These are some of the classic pairings Mom made us as kids.  Well let me introduce you to another great couple, cinnamon and apples. Make this for your mom on Mother’s Day, and she’ll love you forever.

  • Use tart and firm Granny Smith Apples
  • If you don’t have one, buy an ice cream scooper. It will be worth its weigh tin gold!


  • 6 oz Salted Finalandia Butter (Room temperature)
  • 1 ½ cup Cane Sugar
  • 3 Eggs
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • ¼ tsp Ginger
  • ½ cup Finely Chopped Green Apples
  • 1 tsp Vanilla Bean
  • 1 cup Whole Milk
  • ½ cup Sour Cream
  • 2 cups All-Purpose Flour
  • 1 ½ tsp Baking Powder
  • 1 tsp Baking Soda


Pre-heat oven to 350 
Step 1: Cream together butter and sugar
Step 2: Add in eggs, one at a time
Step 3: Add in all spices and vanilla extract
Step 4: Sift flour and rising agents together
Step 5: Add ½ of dry ingredients and ½ of wet ingredients in mixing bowl
Step 6: Beat mixture on medium until combined
Step 7: Scrape down sides of mixture well
Step 8: Add in remaining dry and wet ingredients, mix on medium until combined
Step 9: Scrape down mixer again
Step 10: Add in apples - quickly mix on medium
Step 11: Using an ice cream scooper – scoop batter into large muffin liners
Step 12: Bake at 350o for 20 minutes - check for doneness with wooden skewer. May need additional baking time depending on your oven
