Chop Chop Salad
I know, I know - you're thinking, "Chef Maeve, what's with the salad? Where's the sweet and savory?" Well, as with all things in life you have to maintain balance. This salad is a great way to get in a healthy meal with lots of flavor, can be made in minutes, and will leave you with room for that something sweet or savory later in the day.
Ingredients: (Serving Size: 1)
- 2 English Cucumbers, chopped in small pieces
- 2 Green Onions, Chopped
- 2 cups Grape Tomatoes, sliced in to halves
- 1/4 cup Chopped Red Onion
- 1/4 cup Chopped Kalamata Olives
- 1/2 cup Non-Fat Feta Cheese Crumbles
- 1/4 cup Lemon Juice
- 1/4 cup Olive Oil
- 1 tsp Kosher Salt
- 1/2 tsp Coarse Black Pepper
- Pinch Dried Mint
- Pinch Dried Oregano
Now Let’s Get Started:
Step #1: Put all chopped items in a bowl
Step #2: Combine lemon juice, olive oil, salt, pepper, dried mint & dried oregano
Step #3: Pour lemon juice olive oil mixture over chopped items
Step #4: Add cheese crumbles Step #4: Mix together and enjoy!
