Blackberry Vanilla Pop Tarts

Serves: 10-12 | Prep Time: 30 minutes | Cook Time: 15-20 minutes | Total Time: 45 minutes

Blackberry Vanilla Pop Tarts

Butter Crust Ingredients:

  • 1 1/4 Cups AP Flour
  • 1/4 tsp Kosher Salt
  • 1/2 cup ice cold cubed unsalted butter
  • 1/4 cup granulated cane sugar
  • 1/4 cup ice cold water


  1. Place all ingredients in a food processor except water.
  2. Pluse until bread crumbs form
  3. Then turn on low until ball forms
  4. Wrap in plastic wrap, place in refrigerator over night

Filing Ingredients:

  • 7 cups Cane Sugar
  • 4 cups ripe Blackberries
  • 1/2 tsp. Finlandia Unsalted butter
  • 1/2 tsp. Vanilla Extract
  • 1 pouch Fruit Pectin
  • 1/2 tsp fresh Lemon Zest


Place all ingredients in a saucepan

Slowly bring to 220 degrees or a low boil for 3 minutes

Stirring lighting constantly

Remove from heat and chill over night

Simple Sugar Icing:

  • 1 Cup Powered Sugar
  • 1 Tsp Melted Butter
  • 1/2 tsp Vanilla Extract
  • add water until desired thickness


  1. Mix all ingredients in a bowl- save at room temp for decorating


  1. Roll out dough around a quarter inch thick- (like half your pinky finger)
  2. Cut out 12 pieces
  3. Place 6 on a sheet and brush centers with melted butter
  4. Place 1 1/2 tablespoons of filing in center
  5. Egg wash edges
  6. Place matching piece right on top and press down along egg washed seam to ensure closer
  7. Egg Wash entire top piece
  8. Place in over for 20 minutes at 350 degrees
  9. Decorate with simple sugar icing


*These can be frozen and baked off as desired

*These can also made savory with sausage and cheese, ham and mushrooms

*Once baked these can be stored at Room temp for 72 hours
